Lemon Curd Meringue Cake

Even though the weather in Stockholm says otherwise, it is finally spring! This Lemon Curd Meringue Cake, is a perfect desert to make this time of year and it is absolutely delicious!

The recipe is as follows:

Lemon Curd Meringue Cake 

PREP TIME: 40 mins
BAKE TIME: 1 hr 30 mins
TOTAL TIME: 2 hr 10 mins
MAKES: 12 servings

INGREDIENTS:

For the meringue:

  • 6 egg whites
  • 1/2 tsp Cream of Tartar
  • 3 dl Sugar

For the Lemon Curd:

  • 3 lemons
  • 1.5 dl sugar
  • 50 g butter
  • 1 tbsp cornstarch
  • 2 eggs
  • 2 egg yolks

DIRECTIONS:

For the meringue:

Preheat the oven to 100°C.

Start by beating the egg whites and cream of tartar on high speed. It is crucial that no egg yolks or water get into the meringue mixture as it won’t combine otherwise! Add 1dl of sugar at a time, beating at medium-high speed until the mixture is glossy and stiff peaks form. Make sure to not over beat!

Prepare two baking sheets with parchment paper and place half of the mixture on each. Using a spatula, make peaks in the meringue to give it texture. Place the meringues into the oven for 1 1/2 hours.

For the lemon curd:

Start by washing the 3 lemons and zest them. Together with the juice of two of the lemons, boil together with the sugar and butter. Strain the mixture to get rid of any pieces of zest. Juice the third lemon and mix it together with the cornstarch before stirring it into the sugar and butter mixture. Then, whisk the eggs and stir them into the mixture. Place the mixture on the stove and let simmer until the lemon cream thickens and let cool.

Assemble:

  • Meringue
  • Lemon Curd
  • Whipped Cream
  • Shaved Toasted Almonds

Start by placing one of the meringues on the bottom of the serving tray. Place a reasonable amount of lemon curd on top, followed by the whipped cream. Then, place the last meringue on top and sprinkle with shaved toasted almonds. Serve together with strawberries or other berries!
