Berry Brownie Torte

Before summer comes to an end, I wanted to share this simple and delicious berry brownie torte recipe. It consists of a rich brownie base, topped with a light and fluffy whipped cream, and a variety of fresh berries; I love to make it for a yummy summer treat, whether for a dinner party or just to enjoy at home with family!

The recipe is as follows:

Berry Brownie Torte

PREP TIME: 20 mins
BAKE TIME: 20 mins
TOTAL TIME: 40 mins
MAKES: Approx. 8-10 servings


3/4 cup sugar
6 tbsp butter
1 tbsp water
3/4 cups semi-sweet chocolate chips
3/4 cup (170g) semi-sweet chocolate, for melting
1/2 tsp vanilla extract
2 eggs
2/3 cup all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
Whipped cream (recipe follows), for topping
Strawberries, blueberries, or any berry of your choice, for topping


Combine sugar, butter and water in a small saucepan. Bring to a boil, stirring constantly; remove from heat. Add 3/4 cup morsels; stir until smooth. Stir in vanilla extract. Let cool. Transfer to mixing bowl. Add eggs, one at a time, stirring well after each addition. Add flour, baking powder and salt; stir until well blended. Stir in the chocolate chips. Pour into a 9-inch cake pan, greased and lined with wax paper.

Bake in preheated 350F (175C) oven for 20 to 25 minutes or until toothpick inserted in center comes out slightly sticky. Cool in pan on wire rack for 15 minutes. Invert on wire rack; remove waxed paper. Turn right side up; cool completely. Spread whipped cream over brownie; top with berries. Chill until serving time.

For the whipped cream:
Beat 1/2 cup heavy whipping cream and 1/4 cup sugar in small bowl until stiff peaks form.
