These no-bake energy bites are easy to make, full of feel-good ingredients, and incredibly delicious. I am never able to stop after just one! And the best part about them is that they are even healthy! They are great for a boost of energy after coming back from the gym, or even just for a yummy afternoon snack.
This is also an extremely flexible recipe. You can substitute the chocolate chips with any other chips (white chocolate chips, peanut butter chips, etc.); the peanut butter with different nut butters; or even the honey with other sweeteners such as agave. You don’t even have to make them into small bites; if you are running low on time you could always even just press the mixture into a baking dish and make energy bars instead!
No-bake energy bites

MAKES: About 2 dozen
- 1 cup old-fashioned oats
- 2/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flax seeds
- 1/2 cup semisweet chocolate chips
- 1/3 cup honey or agave nectar
- 1 tablespoon chia seeds (optional)
- 1 teaspoon vanilla extract
Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
Once chilled, roll into balls to approximately 1-inch (2.5 cm) in diameter, or whatever size you would like. Store in an airtight container and keep refrigerated for up to 1 week.
