Macaroni and Cheese

Every time I go to my grandma’s house, this macaroni and cheese is always a must-have. She has made it for the longest time, and I started making it at home as well, given that we live on opposite sides of the world. It is cheesy, gooey, and an absolutely delicious and comforting dish! I typically like to eat it alongside some sort of protein, such as fried fish, chicken tenders or even just simple grilled chicken.

Macaroni and Cheese

PREP TIME: 30 mins
BAKE TIME: 30 mins
TOTAL TIME: 1 hour
MAKES: About 10-12 servings

INGREDIENTS:

  • 4 cups cooked macaroni
  • 1/2 cup (113g) butter
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dry mustard powder
  • 5 cups milk
  • 5 cups (570g) sharp cheddar cheese, shredded
  • Sprinkle of paprika
  • Crushed potato chips (optional)

DIRECTIONS:

Preheat oven to 350°F (175°C). Combine flour, salt, pepper and mustard powder in a small bowl.

In a sauce pan over low heat, melt the butter. Stir in the flour mixture. Cook until smooth and bubbly. Add milk and continue to stir until the sauce starts to boil. Remove from heat and add 4 cups of cheese. Stir until melted. Add macaroni and mix well.

Pour into a 9×14 inch baking dish and top with 1 cup of cheese. Sprinkle with paprika. If wanted, crush up some potato chips and sprinkle over the top of the macaroni before baking, for saltiness and crunchiness.

Bake for 30-35 minutes in the preheated oven.
