Coming out of one of my absolute favorite cookie cookbooks, my family has been making these cookies for many years. They are crunchy on the outside and soft on the inside, with bursts of color and chocolate all around; this recipe is definitely one of my favorites! These cookies are perfect for a delicious snack to indulge in at any time of the year, no matter the occasion.
The recipe is as follows:
Oatmeal M&M Cookies
PREP TIME: 15 mins
BAKE TIME: 15 mins (per tray of cookies)
TOTAL TIME: 1 hr 15 mins
MAKES: Approx. 40 cookies
- 1 cup packed light brown sugar
- 3/4 cup vegetable oil
- 1/4 cup water
- 1 egg
- 1 tsp vanilla
- 3 cups uncooked old-fashioned rolled oats
- 1 cup flour
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1 cup M&Ms
- 1/2 cup chopped nuts (optional)
Heat oven to 350°F (180°C). In large mixing bowl, combine sugar, oil, water, egg, and vanilla. Beat at medium speed of electric mixer until well blended. Add oats, flour, salt and baking soda. Beat at low speed until soft dough forms. Stir in M&Ms and nuts.
Drop dough by tablespoons 2 inches (5 cm) apart onto ungreased cookie sheets. flatten dough to 1/2 inch (1 cm) thickness with the back of the spoon. Bake for approximately 15 minutes, or until golden brown. Let cool for 5 minutes before removing from cookie sheets. Cool completely before storing.
