Cinnamon Apple Bread

This week I made Cinnamon Apple Bread in honour of apple picking season. This recipe is perfect for a midday snack during the cold autumn season.

Cinnamon Apple Bread

1 Loaf

INGREDIENTS:

2/3 cup (1 1/2 dl) white sugar
1/2 cup (1 1/4 dl) butter, softened
2 eggs
2 teaspoons vanilla extract
1 1/2 cups (3 3/4 dl) all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup (1 1/4 dl) milk
1/2 cup (1 1/4 dl) packed brown sugar
1 1/2 teaspoons ground cinnamon
1 large apple, peeled and finely chopped

INSTRUCTIONS:

Preheat the oven to 275°C and grease a 23 x 13-cm loaf pan.

To start, In a stand mixer or large bowl, mix white sugar and butter until smooth. Add eggs and vanilla and continue to beat on medium speed until well combined. Then, add the flour and baking powder, and finally the milk.

Mix the brown sugar and cinnamon together in a bowl and set aside.

Pour half of the batter into the prepared pan. Cover the batter with half of the apples and sprinkle half of the sugar and cinnamon mixture. Pour the remaining batter over apple layer; top with remaining apples and add the last of the brown sugar/cinnamon mixture.

Bake for 50 minutes or until a toothpick inserted in the middle of the loaf comes out clean.
